These would later grow up to be mint chocolate chip and mint with sprinkles.

So as you might recall, when we last saw our daring adventurer(*ahem* that would be me), she was embarking on a cookie making event of epic proportions. Or, at least, that’s what it felt like.

Explanation:  My son’s 3rd grade class was making play-doh sugar cookies, and I was one of the parents who volunteered to make the dough.  Why? because teachers do enough for our kids, and if a teacher is going to be crazy enough to do these wonderful activities with my kid, I am going to be crazy enough to help where I can, in this case, by making cream cheese sugar cookie dough in each of the primary colors. They are shaping them in class tomorrow.

Now, of course, normal people take on only one task they have never done before at a time, but mewell, I am a special kind of crazy, and I have this stupid can-do attitude that makes me think I am this chick >>>

Wonder Woman!

So, naturally, I volunteered to bake cookies for my husband’s squadron bake sale, and, oh yeah, let’s not forget the dinner get-together with friends, where I said I would bring, wait for it …… cookies.

I had this genius idea.  I was going to make a triple batch of the play-doh prescribed by the boy’s teacher, split it into 8 sections.  One batch was plain vanilla, split into 4 primary-colored sections for boy’s class, and the other two were also flavored with mint extract. Half of those were also graced with milk chocolate chips.  Still with me? Me neither.

BREAKING NEWS: Guys, I just found out that today is, in fact, NATIONAL COOKIE DAY, as decreed by Cookie Monster, himself. It’s legit.

Half of both the plain mints, and the chocolate chips were made green, then other half were supposed to have been red, but were actually a lot closer to fuchsia. Pffft. Details.

mint chocolate chip in.... well, mint green.

They keep their shape when you bake them, so it's a good idea to squash them with something flat. Unless you want them to look like ice cream scoops...that could be cool.

Here's the mint-chip section.

I got impatient and started flattening them with my hands, then rolling them with leftover St. Patty's Day sprinkles. MULTI-purpose!

Deck the cookies!

This was the fastest way I could color the play-doh sections, as opposed to washing my mixing bowl and paddle attachment 6 times.

Everything is better with sprinkles.

So, we are all getting ramped up for the holidays, and I know everyone is crazy busy right now.  What are you getting into? Excited? Worried? Baking-therapy? Tell me about it.
