Good day to you! Congratulations on not dying a horrible, painful death in an imagined end-of-the-world scenario, yesterday.  To celebrate, let’s make some damn cookies!

I found these while surfing through Pinterest, and they sounded like a good idea at the time.  Little did I know that they would be the beginning of a downward spiral in my addiction to all things coffee and chocolate.  Reader beware. Adding nutmeg makes them pure evil.  As is my custom, I took a look at the original recipe, and decided I could improve it slightly.  It called for mint in the batter, but there was already mint in the kisses, so I decided that would be minty overkill.  Nobody likes minty overkill.  It’s like Listerine.  Bleck.

So here is the recipe that I adapted from Damn Delicious:

  • 3 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups sugar, divided
  • 2 tablespoons instant coffee, already mixed with boiling water
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground nutmeg
  • 34 HERSHEY’S KISSES Candy Cane Flavored Candies, unwrapped

DIRECTIONS:

Preheat oven to 375 degrees Fahrenheit.

In a medium bowl, combine flour, cocoa powder, nutmeg, baking soda, and salt.

In the bowl of an electric mixer fitted with the paddle attachment, beat butter, 1 1/4 cups sugar and coffee on medium-high until light and fluffy, about 2-3 minutes. Beat in eggs, one at a time, until well combined. Beat in vanilla until well combined.  Gradually add flour mixture to sugar mixture at low speed, beating just until incorporated. Should look like this:

Roll tablespoons of dough into 1-inch balls. Place onto baking sheet and bake about 9-10 minutes.

Remove from oven and lightly(be friggin’ gentle!) press a Candy Cane Kiss in the center of each cookie. Let cool completely on a wire rack. I needed them pretty much immediately after I baked them, for a party at my semi-neighbor’s house.  You should have seen me booking it down the sidewalk with a two-tiered wire cooling rack filled with cookies.  I am sure it was a sight to behold.  You are welcome for that mental image.

They got to cool for about 10 seconds before we were out the door.
